Default means that the field will appear when creating/editing the Matter or Contact card. Required means that the field must be filled in order for you to save the Matter or Contact Card.
You can have a field that is Default but not Required. However, if you have a Required field, it is best practice to also make it Default as well (otherwise, you will be able to save the Matter without populating the field, if you choose not to add it).
